Upside down roast chicken

Ingredients

  • a whole chicken

  • 4 potatoes

  • half a pumpkin

  • 1 sweet potato

  • 1 parsnip

  • half a cauliflower

  • 1 lemon, slices

  • Oil



Recipe


1 Preheat oven to 180c degrees


2 Oil and salt chicken and place lemon slices inside chicken and under wings. Place chicken in roasting pan upside down. Cook for 20 minutes for each 500g.



3 Cut vegetables in chunks and place in a roasting pan, pour oil over veggies.



4 Roast vegetables for an hour.


5 Carve chicken and serve.
